Charred Merguez sausages spiced bulgar salad with torched feta
2 Merguez sausages per person
2 red peppers deseeded and cut into large chunks
1 red onion chopped
handful of chopped coriander
handful of chopped mint
1 red chilli deseeded and finely chopped
juice of 2 limes
handful of good black olives
some slow roasted cherry tomatoes - to taste
3 tablespoons of good oil
150g Bulgar wheat rinsed and drained
Feta Cheese
Flaked almonds
Put Bulgar wheat into a dish with a close fitting lid
Cover Bulgar with boiling water - to just cover, put lid on and leave for a couple of hours
Add all the ingredients except the peppers and Merguez and toss gently
Leave for about an hour for all the ingredients to get to know eachother.
Fire up the BBQ and cook the Merguez and peppers until charred.
Toss the peppers with the Bulgar and put onto a serving platter.
Top with the Merguez, crumble over the Feta cheese and flaked almonds and char with a blow torch
